What is the "Galette des Rois" ?

Traditionally, on Three Wise Men's day, we eat twefth night cake in which a charm is hidden. It is called "La Galette des Rois". In France, there are two sorts of cakes :
In northen France, the cake is filled with frangipane and shaped as a pancake puff. The frangipane is made of an almond cream in a fashion invented in the sisteenth century. The shape of the cake represents the sun . The "Galette des Rois" is a typical French tradition. Where does this tradition of Epiphany come from ? Not from the Three Wise Men ! It is as old as pre-Christian festive day of January 6. The cake symbolizes the return of light after the long winter nights.

In the south, the cake is shaped as a crown to evoke King's crowns. In Provence, it is stuffed with candied fruits. In Spain and Portugal, there is a similar cake as the one in south of France.

How to eat the "Galette des Rois"?

On Epiphany's day, there is a whole ritual to fulfil in order to eat the "Galette"the proper way. It's the number of people present to eat it who condition the number of slices, plus a piece of cake for foreigner or the poor passing by. -- this particular slice is called "Part of God". Custom dictates that the youngest of the assembly, hiding under the table or eyes closed, calls on the guests gradually as the cake is being shared. The one who gets the charm is proclaimed king/queen, a crown is placed on his/her head and then he or she choose her/his queen/king ang gives her/him a crown. The people then drink to the health of the royal couple.
